What you'll need:

• 200g eggs (4 medium eggs)
• 400ml water
• Round cake tin 8x3"

How to make it:

1. Preheat your oven to 150°C.
2. Mix — Place all ingredients into a mixing bowl. Whisk on slow speed for approximately 1 minute. Scrape down. Whisk on top speed for 5 minutes. Scrape down. Whisk on second speed for 3 minutes.
   Alternative method (for a finer texture): Whisk on low speed for 1 minute. Scrape down the sides of the bowl. Increase to medium speed and whisk for 10 minutes.
3. Bake — Fill your lined cake tin, leaving approx. 2–3cm of space from the top. Cover with foil and bake at 150°C for approximately 80 minutes (8x3" tin, 1kg mix) or 110 minutes (10x3" tin, 2kg mix). Baking times may vary — ensure the cake is fully baked before removing from the oven.

Yield: Makes one 8x3" round cake (1kg mix).
