Recipe

Per 1kg mix: 5 eggs (medium), 260ml vegetable oil, 230ml water

Instructions

1. Preheat oven to 140°C.
2. Mix: Place muffin mix, eggs and water into a bowl. Mix on low speed for 1 minute. Scrape down sides. Mix on top speed for 4 minutes. Scrape down sides. Reduce to medium speed and slowly add vegetable oil. Mix for a further 1 minute. Pour into lined baking tin or muffin tray.
3. Bake at 140°C:
   • 8" round tin — approx. 70 minutes (1kg mix)
   • Tall domed muffin (standard size) — bake at 220°C for first 5 minutes, then reduce to 180°C for remaining time
